If your oven is getting too hot and cooking your pizza too quickly, follow the tips below.
If cooking with gas:
Turn your heat control dial to maximum and preheat your oven and stone for approximately 20 minutes.
Once your oven and stone are preheated to 750ºF (400ºC) or higher, launch your pizza.
Immediately after launch, turn your control dial down to minimum to lower the flame.
Rotate your pizza as necessary and monitor closely.
Tip: You can even turn your flame off completely to cook your pizza using the ‘low and slow’ technique.
If cooking with solid fuel:
- Load up your fuel and preheat your oven and stone for approximately 20 minutes.
- Once your oven and stone are preheated to 750ºF (400ºC) or higher, try closing the rear baffle slightly to create a smaller and more controlled flame.
- Once the flame has gone down a little, launch your pizza.
- If your oven is still overpowered, try closing the main baffle immediately after launching too.
- Rotate your pizza as necessary and monitor closely.
