My pizza is burning

There are a few different ways your pizza might be burning:

  • Burnt on top, undercooked base

  • One side of the pizza crust burnt

  • Burnt base

The information below explains how to fix each issue.

 

Burnt on top, undercooked base

Here’s what may have gone wrong:

  1. Your baking stone wasn’t hot enough.

  2. Your dough was too thick.

  3. There were too many toppings on your pizza.

  4. Your toppings were too wet.

Here’s how you can fix it:

  1. Use the Ooni Infrared Thermometer to make sure your baking stone has reached 750ºF (400ºC) or higher before you launch - watch this video.

  2. Reduce the flame output before launch with our live fire ovens. 

  3. Make your dough thinner - follow our Classic Pizza Dough recipe.

  4. Use fewer toppings.

  5. Avoid using toppings with too much moisture.

Here’s what may have gone wrong:

  1. Your pizza spent too long with the same side closest to the flame.

  2. You weren’t turning your pizza enough.

Here’s how you can fix it:

  1. Make sure all sides of your pizza spend enough time on the side closest to the flame, as well as the side furthest from the flame.

  2. Use the Ooni Turning Peel to make turning your pizza easier.

  3. Reduce the flame output before launch.

Burnt base


Here’s what may have gone wrong:

  1. Your baking stone was too hot.

  2. Your dough had too much sugar / oil / additives in it.

  3. There was too much flour on the bottom of your pizza or on your baking stone.

Here’s how you can fix it:

  1. Use the Ooni Infrared Thermometer to make sure your baking stone isn’t higher than 450ºC (842ºF).
  2. Add less sugar / oil / additives to your dough - follow our Classic Pizza Dough recipe.

  3. Use the Ooni Perforated Peel to allow excess flour to fall through.

  4. Clean your baking stone with the Ooni Pizza Oven Brush.
